Lamb loin chops are the porterhouse cut of the lamb. Each one consists of a small piece of tenderloin connected to a piece of the strip loin via a t-shaped bone. They have a beautiful fat cap and incredibly tender, flavorful meat.
Lamb loin chops couldn’t be easier to cook thanks to their even-thickness. We recommend starting them over high heat on the grill or in a pan, then finishing either over indirect heat on the grill or in the oven. Aim for a medium rare to medium finish for the best bite.
