Lamb shank is cut from the bottom section of the lamb leg. This braising cut consists of a bone surrounded by flavorful meat and connective tissue. 

The meat is too tough to sear or grill, but when you cook the shank low and slow it becomes fork tender. We recommend doing a classic oven braise in lamb bone broth or adding tomatoes to make lamb osso bucco. 

However you choose to prepare lamb shank, remember that the most important ingredient is patience. The wait will be more than worth the reward!
